how do you edit the main definition part of an entry?

The name of a page is the word that links to it. E.g. the article Eastwood, Nottinghamshire will only appear if you type in that full name. If you type Eastwood, you will get a 'disambiguation page' that lists several pages with that word in them. The disambiguation page is just a regular page, that happens to list links.
If you're referring to articles with many sections, and the fact that you can 'edit' any section by clicking the button next to it, and there's not one on the first bit - you need to just click 'edit this page' at the top, which will allow you to edit the entire page, all sections
